Simple Food

Making life simpler is good advice. The same can be said about food. Here is an example of something we whipped up last week. Grilled chicken with spices (basil, oregano, cumin, smoked paprika, crushed red pepper) and grilled veggies. This is as simple as a paleo dinner gets, and I don't mind having this with some variance every night.


The veggies in this dish are zucchini, onions, kale, and eggplant. We could have easily used tomatoes, peppers, broccoli, cauliflower, spinach, etc. The possibilities are endless. The kicker? These ingredients were grilled with coconut oil, a good fat. After dinner, 20 or so minutes later, have some fruit or a square of dark chocolate, and you should be ready for a relaxing evening. You will notice, you don't feel bloated or groggy or even tired. That's the point. When you get rid of all the crap and simplify your food, it will lead to a happy and healthy life!
